Southwestern Chicken and Rice Soup


  • 1 tablespoon olive oil
  • 1 cup diced red bell pepper
  • 1 cup diced onion
  • 1 teaspoon cumin
  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 package (8 oz) Old El Paso™ Mexican Rice
  • 1 can (16 oz) Old El Paso™ Black Bean Refried Beans
  • 1 can (4.5 oz) Old El Paso™ chopped green chiles
  • 2 cups cooked, shredded chicken
  • optional desired toppings - sour cream, diced avocado, cilantro, tortilla chips, etc.
