Chipotle Chicken, Mango and Black Bean Enchiladas

Ingredients:
  • 1 1/2 pounds chicken, pounded thin
  • 8-10 flour tortillas
Spice Mix
  • 2 tablespoons chili powder
  • 2 tablespoon brown sugar
  • 1 tablespoon garlic powder
  • 2 teaspoons ground cumin
  • 2 teaspoons onion powder
  • 1 ½ teaspoons smoked paprika
  • 1-2 teaspoons chipotle chili powder
  • ½ teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
Chicken
  • 1 tablespoon Spice Mix (above)
  • 2 tablespoons olive oil
  • 3/4 cup coke from 12 oz. Coke can
  • ¼ cup soy sauce
Chipotle Coke Enchilada Sauce
  • Remaining Spice Mix (above)
  • Remaining Coke
  • 1 teaspoon cornstarch
  • 1 15 oz. can tomato sauce
  • 1/4 cup brown sugar
Enchilada Filling
  • 1 15 oz. can black beans, drained
  • 1 1/2 mangos, diced
  • 1 1/2 cups Monterrey Jack Cheese
Topping
  • 1 1/2 cups Monterry Jack Cheese
  • 1 1/2 mangos, diced
